As has been mentioned before, it may cost you a second or two, but

If you hit Check It and then return to the puzzle the unused letters are - for
the moment - correct.

A faster way without going through the "check" button is to re-enter a letter that you have already placed in the puzzle. Then the missing unused letters are returned to the display.
